Homemade Cole Slaw

This side is easy to whip up, can be made a day ahead and can be altered to your tastes.
We happen to love cilantro, but I know people either love it or hate it.
For those that hate it, like my friends Melanie & Debra, they think it tastes like soap.
My friend Risa and I  LOVE cilantro and think it tastes fresh and delicious!
I read in an article somewhere that it is in your DNA if you love it or hate it.
Crazy, right?
Anyway…..this cole slaw is sweet, tangy, slightly crunchy and can be used on top of BBQ pulled pork, fish tacos or as a side for a cook out.

Ingredients:

Bag of cole slaw mix
3/4 cup white vinegar
1/4 cup apple cider vinegar
1 cup sugar
1 cup water
1 teaspoon salt
1 bunch of green onions (optional)
1 bunch of cilantro (optional)

Place the bag of cole slaw in a big bowl (it really expands when you open the bag).
Mix together the vinegars, sugar, water and salt. Pour on top of the cole slaw.
After rinsing off the green onions and cilantro, I take kitchen shears and cut them into the bowl.
Toss all ingredients together. Let sit in fridge for at least 6 hours. The vinegar wilts the cabbage slightly.
When you serve it, there is a lot of liquid so I like to use tongs to take it out and put it in a bowl.
I reserve the liquid to put any leftovers back in the fridge.
