Sweet Cornbread
Easy cornbread recipe that could also be a dessert. Goes great with BBQ.
Also would be great with a hot soup! You can whip some up for your next grill night.
Ingredients:
1 cup cornmeal
3 cups flour
1 cup sugar
2 Tablespoons baking powder
1 teaspoon salt
2/3 cup oil
1/3 cup melted unsalted butter
1 Tablespoon vanilla
2 Tablespoons honey
4 eggs
2 & 1/2 cups milk
2 Tablespoons sugar in the raw
Preheat oven to 350 degrees.
Spray a 13 X 9 pan with cooking spray.
In one bowl, mix the dry ingredients – cornmeal, flour, sugar, baking powder and salt.
In another bowl, mix the wet ingredients – oil, butter, vanilla, honey, eggs and milk.
Pour the wet ingredients into the dry ingredients.
Pour into baking dish.
Sprinkle sugar in the raw on top of the batter. This adds a little crunch on the soft cornbread.
Bake at 350 degrees for 45 to 55 minutes. If it starts to get too brown, place a piece of foil on top while baking.
I know, I know, it tastes like cake. Soft, sweet, with just the right amount of crunch on top,
perfect side to pulled pork or pulled chicken. Your kids will love this one!
