Comfort Food – Creamy Pulled Chicken with Carrots & Mushrooms
Yesterday it was chilly outside, even though it is almost Spring. We had our friends come over to enjoy a Friday night dinner. Pair this with a nice tossed salad and you are good to go. What warms your belly more than a bowl of egg noodles topped with pulled chicken, sweet carrots, and sauteed mushrooms in a sauce that is a combination of a soup and stew? This recipe is easy to throw together, I actually prep the ingredients the day or night before. If you are off to work or have a busy day, it is easy to drop in the crockpot in the morning and then you have a nice dinner all ready when you get home. Feel free to add whatever veggies your family likes.
Ingredients:
2 to 3 pounds boneless skinless chicken breasts, trimmed
salt and pepper
1 can of cream of mushroom soup (I use 98% fat free)
1 can cream of chicken soup (I use 98% fat free)
16 oz baby carrots
2 – 10 oz package of sliced mushrooms, sauteed in olive oil, salt and pepper
3 cups low sodium chicken stock
1 – 8 oz cream cheese, can be lower fat (do not use fat-free as it doesn’t melt well)
1 package of egg noodles
Line your crockpot to make for easy clean up!
Drop the raw carrots in, then the sauteed mushrooms.
Add the cream of mushroom soup, then the chicken breasts.
Add the cream of chicken soup and some salt and pepper, and the chicken stock.
Cover and cook for 8 to 10 hours on low.
30 minutes before serving, add the cream cheese.
This is a great time now to set the table and make your noodles.
Shred the chicken slightly and gently fold ingredients together.
If sauce is too thick, add more stock.
We love these egg noodles. Feel free to use any type of pasta or rice or zoodles (zucchini noodles) you like.
Leftovers are great the next day too.
My husband will also put some in the freezer as homemade frozen meals.
He’s been known for eating Thanksgiving meals in July.
