Ready for the snow?
This winter has been very, shall we say, non-existent. F I N A L L Y, last night it snowed on the East Coast. Yippee! I have a February birthday, so maybe that’s why I love winter. Curling up in pajamas with blankets piled high and snow coming down is great. No school for the kids and the first thing my kids want to know is what is on the menu, lol. Today, I’ll be making pulled BBQ pork in the crock pot, with some homemade coleslaw (http://peacelovesprinkles.com/2017/03/14/homemade-cole-slaw/) and a sweet from scratch cornbread (http://peacelovesprinkles.com/2017/03/14/sweet-cornbread/). Super easy and minimal effort. Stay safe and warm!
BBQ Pulled Pork
Ingredients:
5-6 pound Boneless Pork Roast
1 cup low sodium chicken broth
1 cup of your favorite BBQ sauce (We use Sweet Baby Ray’s)
2 teaspoons salt
1 teaspoon pepper
1 teaspoon paprika
2 Tablespoons Worcestershire sauce
2 teaspoons garlic powder
1/4 cup brown sugar
I like to line my crockpot with these slow cooker liners Reynolds Slow Cooker Liners, 4-Count (Pack of 6)
This makes all the work of cleaning the crockpot a snap.
Place pork roast in the crockpot. Mix together the rest of the ingredients in a bowl.
Pour sauce on top of the pork and place the lid back on.
Turn on the crockpot for 8 to 10 hours on LOW.
And this is what it looks like after 10 hours
Shred it up with two forks or some tongs, then add it back to the sauce.
I skim some of the fat off the top of the sauce with a spoon before putting the pork back in.
This is great to make for a crowd or for a tailgate, it makes a ton.
