Crispy & Chewy Coconut White Chocolate Cookies

So in the past few days, two different friends stopped over and were looking for something sweet.
But there was nothing for them, lol. They asked because I usually do have baked items on the counter.

Anyway, since I didn’t have anything when my friends (Melanie & Tracey) stopped over,
I thought I’d try a coconut cookie recipe.
These cookies don’t have that many ingredients,
are easy to mix up and end up being thin, crispy on the outside and chewy throughout.
They have more coconut than flour, so that helps make them nice and chewy.
The white chocolate is creamy and sweet. If you like coconut, you should definitely try these.

Ingredients:

1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon kosher salt

1 stick unsalted butter, room temperature
1/2 cup white sugar
1/2 cup dark brown sugar
1 egg
2 teaspoons vanilla

1 1/2 cups shredded sweetened cocont
3/4 cup white chocolate chips

Directions:

Sift together all the dry ingredients and set aside.
The flour, salt, baking soda and baking powder

 

Cream together the butter, white and brown sugars.

 

Add the egg and vanilla. (You know I used my vanilla bean paste!)

 

Add the dry to the wet and mix together.

 

 

Mix in the coconut and white chocolate.

  

Bake at 350 degrees on parchment paper for 8 to 11 minutes.
I used a 1 Tablespoon scooper and got about 36 cookies.
