Mixed Berry Cobbler – Summertime Delicious

My son and I went berry picking at a local farm over the weekend.
Blueberries were amazing!!

 

When there are a lot, it is easy to pick.
Blackberries were HUGE! These were so easy to pick.


We picked over 6 pounds of each in no time at all.
OK, well maybe 45 minutes total.

We ate a ton of berries just rinsed off.
(Helpful Hint – as soon as you get berries home, fill a big bowl with cold water
and a splash of white vinegar, about a Tablespoon. Gently let your berries swim
in there for a minute or so and drain on paper towels until DRY. This gets rid
of dirt and any other yucky stuff. It also helps keep your berries in the fridge longer.
Not sure why, but it works!)

That day, I made delicious blueberry streusel muffins from the recipe below.

These were delicious!! But…I didn’t take pictures to blog them, sorry!
I used that recipe, but added a Tablespoon of vanilla.
I also used brown sugar in the topping instead of white sugar.
Anyway, back to the cobbler….

The berry cobbler can be made with any combination of berries.
Strawberries would be delicious in here too.
This recipe makes a pretty big pan that has cooked berries on the bottom,
topped with a crunchy, crusty, cakey topping. MMMMMM ♥

INGREDIENTS:

2 cups white whole wheat flour (tried to make it a little healthier)
1 cup sugar
1 teaspoon salt
1 Tablespoon baking powder
1 cup skim milk
1 cup light cream
1 stick melted unsalted butter

7 cups fresh berries (I used 4 cups blackberries and 3 cups blueberries)
2 Tablespoons sugar for the berries

1 Tablespoon raw sugar for the top crust

DIRECTIONS:

Preheat oven to 350 degrees and spray a 9 X 13 dish with cooking spray.
Pyrex Basics Clear Oblong Glass Baking Dishes, 2 Piece Value Plus Pack Set
Place all the berries in the baking dish and top with the 2 Tablespoons of sugar.
Mix together in a bowl the flour, sugar, salt and baking powder.
Add the milk, light cream and butter and stir until just mixed.
Pour the batter on top of the berries and top with some raw sugar.
Bake for 55 minutes to 1 hour and 5 minutes. Keep checking with a toothpick.
Let cool slightly and serve with powdered sugar or whipped cream or vanilla ice cream….

Place all the berries in the baking dish and top with the 2 Tablespoons of sugar.
If the berries you have are not that sweet, feel free to add a little more sugar.


Mix together in a bowl the flour, sugar, salt and baking powder.
Add milk, light cream and melted butter.


I just melt the butter in a mug in the microwave.

Mix gently.


Pour the batter on top of the berries and top with some raw sugar.
