Cinnamon Chocolate Chip Baked Oatmeal
My twin nieces Sofia & Sydni were here for the week.
Every summer they come for one or two weeks and stay with us and go to our local camp.
Like a mini vacation for the girls, swimming, arts & crafts, and homemade baked goods. ♥
I’m always trying to find new recipes to try out on them since anything Aunt Jen makes is the best 😉
Like my kids, they love chocolate too.
This does not have as much chocolate as a cookie, and has a lot of oats.
I also use skim milk, so it is sort of healthy, right?
This recipe is so easy and you can even get it ready the night before.
Mix all the ingredients together and bake.
You can even change up the mix-ins to raisins (my family won’t eat them)
or craisins or any dried fruit.
Ingredients:
2 cups milk
1 stick unsalted butter, melted
4 eggs
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 Tablespoon cinnamon
2 teaspoons vanilla extract
6 cups of quick cooking oats
1 cup of chocolate chips (I use Ghiradelli dark chocolate)
Mix the eggs, sugar, baking powder & salt.
Add the cinnamon and stir.
Add vanilla.
Add melted butter.
Add milk.
Mix all together.
Add the oats.
Add the chocolate chips (don’t you love the action shot?)
Fold all ingredients together.
Pour in 9 X 13 pan sprayed with cooking spray.
Spread out in the pan. (If you are making ahead, cover with plastic wrap and stick in the fridge)
Top lightly with raw sugar prior to baking.
Bake at 350 degrees for 35 minutes if baking immediately or
40 to 45 if you took it out of the fridge.
It is creamy, chocolatey, and warm tasting from the cinnamon.
This could be a breakfast, snack, or dessert.
Reminds you of a french toast casserole, although no wheat.
If you left out the chocolate and drizzled with some maple syrup, there you go!
