Summer Sweet Street Corn

Both my kids love this side dish or app so much. It kills me
when we go to a restaurant and they order street corn and it costs
like $6 for 2 pieces of corn!! Craziness!

The food store I was shopping at yesterday had local corn for 3 for $1.
My husband grills it up and then they get to spread the spicy garlic aioli on top,
top with a sprinkling of feta, cilantro and a squeeze of fresh lime.
They eat it like candy.
(My husband now cuts his off the cob so it is easier to eat.)
So good in the summer for a BBQ.
I served this with grilled chicken and an arugula watermelon salad.
Summer food always tastes so fresh.
Nothing like a bite of the sweet crunchy corn with the spicy sauce, sour lime, and creamy salty feta.

INGREDIENTS:

corn on the cob, 8 ears in this recipe
1/4 cup chopped cilantro (if you like cilantro ♥, otherwise, leave it out!)
1/2 cup light mayo
2 teaspoons sriracha
1 teaspoon garlic powder
1/2 cup crumbled feta
2 limes, quartered

DIRECTIONS:

Mix the mayo, sriracha and garlic powder and set in the fridge.

Quarter the limes and set in the fridge.

Chop cilantro and measure out feta and put in the fridge.

 

Husk the corn.

Brush with melted salted butter before putting on the grill. (This is optional, but tastes so good)

Grill them slowly so they don’t burn.

Look how nice & toasty!

Take the sauce from the fridge and let people spread it on their own piece.
Our daughter loves this stuff.

Top with a little cilantro.

Sprinkle with feta. I know it falls off.
But when the corn is hot, it melts a little and some of it does stick.
Eat it carefully so you get some in your bites and it is amazing.
