Apple Cake for the New Year

 

Cinnamon, apples, and vanilla cake all rolled up into one delicious dessert.
The crust is the best part of this cake, made by adding a secret ingredient (orange juice).
This recipe has been made by my mother for years until I learned how to make it.
It doesn’t seem like the Jewish New Year without this cake.

Here is the original recipe in my Mom’s handwriting:

INGREDIENTS:

4 apples, peeled, cored and sliced (I use Granny Smith & Pink Lady – crunchy apples)
5 Tablespoons sugar
2 Tablespoons cinnamon

2 1/2 cups sugar
4 eggs
1 cup canola oil
3 teaspoons vanilla

3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt

1/3 cup orange juice

QUICK DIRECTIONS:

Peel, core and slice 4 apples. Sprinkle them with the cinnamon-sugar mixture and set aside.
Mix together sugar, eggs, oil and vanilla in one bowl.
Mix together flour, baking powder and salt in another bowl.
Mix the dry ingredients and the wet ingredients. Add the orange juice. This is your batter.
Pour 1/3 of the batter in a bundt pan that has been sprayed with cooking spray.
Add 1/3 of the apples. Then more batter and apples and the rest of the batter and apples.
Bake at 350 degrees for ~1 1/2 hours.

DIRECTIONS WITH PICTURES:

Mix together in one bowl (BOWL 1):

Mix together in another bowl (BOWL 2):

2 1/2 cups sugar
4 eggs

Mix together in another bowl (BOWL 3):

3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt

Separate cup (BOWL 4):

1/3 cup orange juice

Peel, core and slice 4 apples. Sprinkle them with the cinnamon-sugar mixture and set aside.

Mix the dry ingredients from BOWL 3 into the wet ingredients in BOWL 2.


Then add BOWL 4, the orange juice. This is your batter.

Spray bundt pan with cooking spray. (Make sure you spray it good).


I actually use a silicone bundt pan and put it in a regular bundt pan so that it is able to hold it up.

Pour about 1/3 of the batter in the bundt pan.


Layer 1/3 of the apples around the batter.
Then another 1/3 of the batter, and more apples.

 
Then the remainder of the batter and apples.

Bake at 350 degrees for 1 1/2 hours. Check after 1 hour and 20 minutes, and could go up to 1 hour 45 minutes.

Take it out and let it cool in the pan for a few minutes and then turn out onto a plate or a platter.

 

 

 

 

This cake will stay moist for several days. The crust on the outside is DELICIOUS!

  
This is my husband’s favorite cake.
It doesn’t look as fancy as some other desserts, but I’m telling you, the taste is out of this world.
The taste and aroma always reminds me of the holidays. Enjoy!
