Passover Kugel

This has been a hectic couple of days. I hosted book club Wednesday night, then a Friday night dinner for my son and 11 other middle schoolers, and then we are hosting Passover Seder tomorrow night and Tuesday night. My matzoh ball soup is done, mandel bread is done, matzoh toffee is done, and a flourless chocolate cake is done (also is my daughter’s birthday tomorrow, so a special dessert for her). I made this kugel and will just warm it up tomorrow night before dinner (probably a few minutes in the microwave). I like this kugel because it is easy to mix together in one bowl and also it is parve (milk or meat). There is no dairy in the kugel, yet it seems creamy. This comes from the pineapple that is blended up in its own juices. It is slightly sweet, and makes a great side at Seder for those picky eaters who only like carbs. I’m sure you all know someone like that 🙂

Ingredients:

8 eggs
1/2 cup vegetable oil (I use canola)
1 cup unsweetened applesauce
1 20 oz. can crushed pineapple with juice, blended up in a blender or food processor
1 cup sugar
1 teaspoon salt
2 teaspoons vanilla
1 teaspoon cinnamon
13 sheets of matzoh, broken into pieces


Here is a picture of the pineapple blended up, in case you have kids who don’t want chunks of fruit in their kugel.


Add eggs, pineapple, applesauce


Add vanilla, sugar, salt and oil


Mix together and add cinnamon


Break up the matzoh and add right to the bowl


Mix all together and preheat oven to 350 degrees

Feel free to use any shape dish you like.

Bake at 350 degrees for 40 to 50 minutes.

Let cool a few minutes, then flip over onto a plate.


Make sure you still spray the pan with cooking spray so it comes out easily


Slices up just like a cake


Smells great, tastes great! If your family likes other fruit, feel free to add that in as well, such as raisins, craisins, or chopped apples.
You’ll like that this recipe is easy and you can make it ahead. You can even serve it cold for breakfast.
The sweet scent of apples, pineapple, cinnamon and vanilla fill the house and make it feel like a holiday.
